I have been here twice with my husband and no matter what I've tried it seems to look good but isn't. No I haven't had Covid 19 so my taste isn't messed up, there is just literally no seasoning in the food. It reminds me of hospital or nursing home food.
I hope that your experience here will be better than mine.

The staff is so friendly and efficient. The kitchen, dining, and (womens’) restroom areas are all very clean. I did not go in the mens’ restroom. Food prices are reasonable and the daily special prices are great. Food service is super quick and the food tastes amazing. Thank you Copan Restaurant for an amazing experience and food!

I frequently drive us 75 between Omaha and Dallas. It Is a wasteland for trucks. 650 miles with only two decent restaurants that have truck parking.
This is a throwback to a time when there were independent truck stops with excellent restaurants across the country. Nowadays Big Chain truck stops with fast food trash dominate the highways and have driven most of the independents out of business.
This one survives because the excellent food and customer oriented service generate a steady business from local people as well as truck drivers.
My personal favorite is the chicken livers but everything I have have tried here has been excellent.

The staff was really busy the evening I was there. They were very courteous and efficient. The food is always prepared to my taste. The prime ribs are the best in the area!!!

Very impressed with the service. Even though I got a to go meal .( I was just driving by). I waited in a open table and every wait staff that walk by acknowledge me and ask if a been served. Not quite sure why other restaurants are not as attentive as this one. Chicken fried steak was delicious.

Big fan of the food. We go quite a bit, diner type food with daily specials. Great for family's. I have a 4 and 8 year old they enjoy going. They have a gifts and seasonal hand made stuff in the truck stop side. Cute bleach shirts, hats and more. Prices are reasonable. Service is quick and everyone is sweet.
